Chunks of anchovy loins in glass jars, handcrafted from a careful selection of fresh raw material captured in spring. After a meticulous cleaning of the fillet so as not to leave any skin or bones, the anchovies are salted according to their own recipe (the Sanfilippo family have been preparing the salting process for 5 generations, as they learned from their Sicilian ancestors), left to mature for 24 months and then bathed in the best quality olive oil.
